Mashed Turnips with Crispy Shallots
serves 4
Ingredients
- 4 lbs large turnips, peeled and cubed
- 1 C whole milk
- 6 T salted butter
- 1 1/2 C vegetable oil
- 3 T unsalted butter
- 5-6 ea shallots, peeled and sliced into thin rings
Instructions
- Fry the shallots in oil at 250 until golden brown, then drain and cool.
- Boil the turnips in salted water until easily pierced with a knife, then mash the turnips, add the butter and milk, and season to taste.
- Plate, garnish with the crispy shallots, and serve.
